Some recipes for Memorial Day Weekend





Here are a couple recipes for the Memorial Day weekend coming up. Easy and Healthy.

1. Black Bean Salsa
Mix 2 15 oz cans black beans, rinsed and drained
1 17 oz can whole kernel corn, drained....or frozen and thawed (I use)
2 large tomatoes, seeded and chopped
2 to 3 avocados, peeled and chopped
1 purple onion, chopped
1/4 c. fresh cilantro
3-4 Tbls lime juice
2 Tbls olive oil
1 Tbls red wine Vinegar
1 teas. salt
1/2 t. pepper

Garnish if desired with fresh cilantro and avocado pieces.

Chill. Serve with tortilla chips of your choice.
Makes 6 Cups.

2.Salad Suzanne

Dressing:
3/4 c. extra virgin olive oil
1/2 c. balsamic vinegar
1 Tbps Dijon mustard
1 tsp each of dried oregano and basil (Quadruple the quantity if using fresh )
4 cloves crushed garlic

Combine and mix/ shake well. I use the Pampered chef measure mix and pour container
Refrigerate for flavors to blend and intensify. Over night or make in morning for afternoon party.
Remove from the fridge 1/2 hour before serving.

Meanwhile prepare a bowlful of salad greens such as Romaine. You can use the Bagged lettuce: I use Riviera blend if I don't have Romaine hearts.

Then add:

1 c. diced Feta cheese: the flavored varieties work well
1 c. diced plum tomatoes or halved cherry tomatoes
1 c. of sliced green onions
1 small bag of pine nuts or 1/4 c. chopped walnuts (toasted lightly in skillet until fragrant)

Mix gently in salad bowl.
Pour on an ample portion of the dressing and toss. Dust with salt and pepper to taste.

In Honor of Earth Day 2011

Ever wondered what we can do to Keep ourselves and the Earthy Healthy?

Try of few of these.

1. Start by replacing a bunch of your cleaners (your general spray cleaner, glass cleaner, counter top cleaner, floor and bathroom cleaners) with a natural, nontoxic all-purpose cleaner. You will only need one to do that. Really!

2.Recycle one plastic bottle today and you'll save enough energy
to power an MP3 player for 141 hours. Or take 77 hours worth
of digital pictures.

3. Recycle as much as you can: Most electronics contain heavy metals, which can be harmful to the environment. These devices are also being thrown away at an alarming rate – accounting for 70% of the toxic waste in landfills. Find a recycling center by you.

4. Replace your laundry detergent with a natural nontoxic one so the clothes you wear and the sheets you sleep on have no fumes for you to breathe.

5.Shop the perimeter of the grocery store and avoid processed food. Even better, choose organic and locally grown meats, dairy, fruits, and vegetables. Find farmers markets or local food co-ops to join.

6. Use BPA-free plastic baby bottles and fill them with breast milk or organic formula. Choose powdered formula over canned formula to avoid BPA leaching from the can-lining.

7. Avoid chlorinated household products such as paper towels, toilet paper and coffee filters. Buying paper products made from post-consumer content helps curb the global warming pollution, save the forests, energy and water.

8. Stop buying bottled water—NOW. Instead, buy a water filter pitcher and keep two in your fridge at all times.

9. Walk more often, car-pool to work or events. Use public transportation.

10. Compost: This assists to reduce the amount of waste sent to the landfills. In the meantime it creates a healthy fertilizer for your plants and flowers.

11. Reuse: Reuse bottle, containers, boxes etc. Be creative to think of ways to reuse items you may normally throw away. My son recently made a boot scraper out of bottle caps and a large piece of wood. Works great outside after gardening.

The list could go on and on.
Try one thing a day or more.....
Think about planting a tree.
Each Human needs 10 tress to supply enough oxygen to breathe for one year.

Be Kind and leave a gentle footprint on the earth. She will appreciate it .

Great testimonial for Shaklee energy chews

Hi Ladies,
just wanted to share my new found appreciation for the energy chews. I had a long run to do today, and was completely out of chews. I decided to just get some energy blocks from the drug store to use since I was out.

I figured it wouldn't be a big deal. Well it was a huge mistake! Shaklee chews give me more consistent energy and the drug store energy blocks made me feel like I was on a sugar high and would quickly crash. The worst part was after I finished my run, I felt horrible.

Normally I feel fatigued, but after I drink my post run cinch shake, I feel fine. My fatigue was much more intense and I had the worst upset stomach, I seriously thought I was going to puke! It ended up taking my body almost three hours to fully recover.

I did some research and found that the upset stomach is common after long runs and its due to all of the added sugar that is in energy chews and energy 'gu'. Shaklee chews have no added sugar! I definitely learned my lesson, I will have plenty Shaklee Energy Chews from now on! Hope you all are having a great weekend.

Peanut butter balls


This recipe is requested so often by my customers and friends that I thought I woudl post again. While I do not add all that is in these balls in the image, they are great snacks just the same.

My children love these, my fitness friends love them as do I.
They are a quick snack, on-the-go grab
I do not know how many calories or weight watcher points they are. But they are GOOD! You can feel GOOD eating them and sharing them with others.

1 c. soy protein powder: I use Energizing Soy protein from SHaklee: Cocoa or vanilla
1C. natural peanut butter: I think Trader Joes or Costco natural brand is the best.
1/2 cup honey.

Mix it all together in a bowl. Break off balls and roll them smooth.
May add sunflower seeds, oat bran, wheat germ, flax seed, cranberries. If you add these ingredients, I suggest you add more honey, up to a cup.

Refrigerate if you like. Not necessary as there is nothing in it to spoil. We just prefer them cooler.

I saw this info in Kiwi magazine today, on line. I think it is a great guide for childrens health. I support taking vitamins and supplements to fill in the gaps where your diets fall short. But if you can get the nutrients from foods, all the better.
